I love cooking with pears! They go beautifully with both sweet and savory dishes.
For this dish, we’ll use firmer pears, so they keep their bite after cooking.
You can also cook according to the season with this recipe, by using fruit that is locally available at the given time, such as peaches, blueberries or strawberries. Apples would be a great substitute as well.
The dish is so easy and quick to make, something you can toss together at the last minute.


1 pear
50 ml balsamic vinegar
1/4 lettuce, rinsed and dried
1/2 cucumber, diced
25 gr. grated parmesan cheese


Serves two.

In a bowl combine lettuce with the diced cucumber and parmesan cheese.
Cut the pear into quarters, remove the core, and slice the quartered pear lengthwise. Over medium heat, sautee the pears in olive oil for about 1 minute. Add the vinegar, simmer, and let it reduce by half. Add the balsamic vinegar and pear mixture to the lettuce, cucumber and parmesan cheese. Toss until the cheese has melted a bit, and serve immediately in your favorite bowl or on a fancy plate.
